Dissolve the yeast in the water in a large bowl. Add salt, rye flour and most of the wheat flour and knead the dough. Add more flour
a little at a time until the dough is soft and elastic and can just drop your fingers. Allow the dough to rise covered for 45 minutes.
Roll out the dough into two large circles and place them on separate pieces of baking paper. Thoroughly chop the chefs and cut them into as thin slices as possible. Spread out the artichokes on the pizzas. Sprinkle the cheese over the chefs and sprinkle the shrimp on top. Bake the pizzas at 225 degrees for about 10 minutes, until the bottom is golden brown at the edge.
Rinse and dry spinach. Stir together oil and lemon juice and flip with the spinach. Season with salt and pepper. Sprinkle some of the salad on the baked pizzas and serve the rest next to it.
