Muffins with Ham and Broccoli

  • 250 g broccoli
  • 1 onion
  • 1 tbsp tablespoon oil
  • 3 eggs
  • ½ dl fresh parmesan cheese
  • ½ dl light milk
  • 2 dl wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • pepper
  • 100 g ham
  • 8 cups of paper muffins


  • 4 thick slices of rye bread
  • 4 carrots
  • 4 apples

Cooking Muffins with Ham

Cut the broccoli into small cubes. Chop the onion. Sweat broccoli and onion in 1 tablespoon oil on a pan 2-3 minutes until brown. Cool the mixture until lukewarm. Put the eggs in a bowl and stir in parmesan cheese, milk, wheat flour mixed with baking powder, salt and pepper. Cut the ham into small cubes. Blend the ham and broccoli mixture together.

Brush the muffin forms with the rest of the oil. Distribute the dough herein. Bake them at 180 degrees approx. 40 minutes until colored golden.  Cool them or eat them warm with rye bread, carrots and apples.

You can put the paper cupcake molds into a cupcake baking mold to better hold the mold.
