The Barbecue sauce marinade can be used as a dip sauce, mixed with sour cream, as dressing, as sauce for meat or vegetables that are roasted in the pan and grill in oven and outdoor grill. The batch gives a little over half a liter.
Ingredients of spicy barbecue marinade:
Approximately 100 g of chili
Recommended chili: All can be used. Chupatillo (6) Since the Pimenta Neyde (9)
1 glass good, peeled tomatoes
2 tablespoons tomato paste
1 onion
4-6 cloves garlic
½ cup oil
2 tsp dark muscovado or brown sugar
1 cup apple vinegar
5 teaspoons of English sauce
2 tsp dijon mustard
1-2 tsp salt
Thinly slice onions and garlic, but keep them separate and then slice chili. Put the saucepan over medium heat and fry the onions in the oil. They don’t need to change color, just should be softened. Add garlic and tomato paste and fry for 2-3 minutes more and go on stirring. Pour remaining ingredients in the saucepan and simmer, uncovered, for about half an hour with frequent stirring. Remove the sauce from the heat and blend well with a hand blender, or let it cool slightly at first and then use food processor / blender. Make the sauce back into the pan and bring it back to a boil and simmer 5 minutes more. Season to taste along the way – it may need more chili, sugar, spice or other. When you are satisfied, take the pan off the heat.
