Pie with cottage cheese

Try this pie with cottage cheese and spice up your usual recipe.

This recipe for cottage cheese pie is very suitable for everyday food. This does not mean that you cannot serve it for guests and parties, but that you can easily enjoy it for everyday life as well.

Ingredients for pie with cottage cheese

For the cake:

  • 2 ½ dl oatmeal 
  • 2 ½ dl wheat flour 
  • 25 g butter
  • ½ teaspoon coarse salt
  • 100 g cottage cheese
  • 2 tablespoons water
  • 1 egg whipped

Pie Filling:

  • 150 g bacon in thin slices
  • Boiling water
  • 200 g of green asparagus 
  • 5 spring onions in thin rings (about 75 g)
  • 1 teaspoon coarse salt
  • 2 eggs
  • 175 g Cottage Cheese
  • ½ teaspoon coarse salt

serving:

  • The pie can be eaten as an accessory for fried chicken
  • The pie can be eaten with a salad

Recipe for the pie with cottage cheese

Course of action

For the cake:

  1. Use a food processor or blender to chop the oatmeal until it looks like coarse flour. 
     
  2. Add salt and mix until well blended.
     
  3. Now add cottage cheese and butter until it begins to gather.
     
  4. Add the egg as it is, or whisk it just before pouring it in and knead it slowly in the machine.
     
  5. Add water and run slowly until you have a finely assembled dough lump that you can work on.
     
  6. Pour the dough into a bowl and collect with your hands. Add any. a tablespoon of water more if needed.
     
  7. Roll out the dough into a thick layer.
     
  8. Grease a springform of approx. 24 cm with oil or butter.
     
  9. Lay the dough in the mold and press the dough out and half up the edge all the way around. Make sure the thickness is roughly the same all around.
     
  10. Turn on the oven at 200 degrees ordinary oven.
     
  11. Bake the bottom in the middle of the hot oven for approx. 7 minutes. 
     
  12. Take out the pie and cover the pie bottom with a piece of baking paper to prevent it from getting too dark and then bake it for approx. 5 minutes further.
     
  13. Take the pie out and let it cool on a grill.

Pie Filling:

  1. Cut bacon into diced or smaller pieces and fry it crispy on the pan.
     
  2. Clean remove the cool end of the asparagus. Grasp the thick end of the asparagus and gently bend it to crack the lower and cool end.
     
  3. Put asparagus in a bowl and pour boiling water so that they are just covered.
     
  4. Let them soak for a few minutes before dipping them dry with a towel and giving them a little salt.
     
  5. Cut the spring bulbs into thin rings.
     
  6. Put asparagus, spring onions and half the bacon in the bottom of the pie and evenly distribute them.
     
  7. Beat the eggs together.
     
  8. Turn cottage cheese and salt in until you have an even mass. 
     
  9. Distribute the filling over the pre-baked bottom. 
     
  10. Tap the mold gently against the kitchen table to avoid air bubbles in the filling.
     
  11. Put the pie back in the oven and bake it for approx. 30 min. Look at it when half the time has passed and then look regularly. If there is a danger of it getting too dark, put the baking paper over it again.

Accessories / serving

When cottage cheese pie has this type of filling, it is great for eating with cooked or fried chicken, but you can also choose to serve it with other types of meat, such as a good lamb stew.

However, since there is already meat in the pie, it is not necessary to serve it with meat.

It can easily be eaten alone or together with a good coarse salad of, for example, olives, diluted spinach leaves, cherry tomatoes and not least good oil vinegar dressing.

Finally, you can make a salad of sliced ​​cabbage and other slightly coarse vegetables such as carrots or baked cherry tomatoes.

In the winter months, you may prefer to serve it with vegetables.
