Chicken salad with tomatoes


This delicious tomato salad with chicken tastes very good and can be used as both a lunch and dinner. Tomatoes are healthy, full of nutrients and tastes great, especially in summer when they are in season. Tomatoe contains beneficial agent lycopene, and it is best to heat up the tomatoes and eat them with a little oil. Therefore, the tomatoes in the salad baked in the oven and mixed with a little olive oil. It also highlights the tomato flavor.

Ingredients for 2 prs.

1 / lettuce or mixed salads
1 small red onion
juice from 1 lemon
New potatoes, boiled and peeled
1/2 cucumber
Peas , thawed
4 large tomatoes
2 pieces of chicken breast
Unrefined salt flakes and fresh ground pepper
Fresh herbs like thyme and oregano
Extra virgin olive oil


  1. Rinse and dry the cucumbers. Tear or cut into smaller pieces and distribute it on a plate. Cut the red onions into thin wedges and place them in lemon juice for 5-10 minutes. It provides the healthy red onion a softer and round taste. Cut the new cooked  potatoes into slices and cucumber into tiny pieces. Wash the tomatoes and cut them into slices. Place them on a baking tray lined with baking paper and bake in the oven at 180 degrees for about 30 minutes or depending on tomato size. When they are baked, put  extra virgin olive oil and sprinkle  salt and pepper. While the tomatoes are in the oven , you can roast the chicken breast in butter. Now add potatoes, red onion, cucumber, tomatoes and slices of chicken breast on top of the salad. Finally sprinkle with peas and freshly chopped herbs. You can serve the salad with some good bread and a pesto or a good dressing.
