This delicious Salad Nicoise Recipe will take place in your “Healthy Salads” collection IMMIDEATELY.
4 or 8 quail eggs
1 large head of lettuce
200 g haricots verts
2 cans of tuna in oil
8 plum tomatoes or cherry tomatoes
1 red onion
16 black olives without seeds
12 anchovies in olive oil
1-2 tsp Dijon mustard
1 tablespoon good mayonnaise
4-5 tbsp cold-pressed virgin olive oil
1 tablespoon vinegar and 1 teaspoon maple syrup
Unrefined Salt and freshly ground black pepper
Boil the eggs for 8 minutes (ordinary eggs) or 2 minutes (quail eggs). Cool the eggs in the cold water. Rinse the lettuce, swirl it dry and spread the leaves on a platter. Get the beans and cook them al dente in salted water for 3 minutes or steam them over a little water and put some salt on them afterwards. Cool in ice-cold water immediately and let them drain. Spread tuna and beans over salad. Cut plum tomatoes and eggs in halves or quarters and garnish the salad with them. Peel and chop the red onion and spread it over the salad with olives and anchovies. Whisk dressing and drip it over the salad eventually. Serve immediately.
