4 mature, and thus slightly soft avocados
juice of ½ lemon
1 clove garlic
1 tsp salt
1/4 teaspoon freshly ground pepper
1 pinch cayenne pepper or 1/4 teaspoon chili paste
1 cup sour cream made from the 18% of milk of a cow in summer allowed to bite the grass itself freely (organic sour cream)
Prepare your avocados, remove the stones out and scoop the flesh into a bowl. Add the remaining ingredients and blend it all together with a hand blender. Alternatively, you can bog thoroughly with a fork or in a mortar – so you get a harder and less airy guacamole. Then season with salt and cayenne pepper / chili.
Ready now after one hour of cooling.
