This lentil-cabbage salad is very popular because it is easy to make and tastes great. You can use savoy cabbage or cabbage for the salad that can be served directly as is or as a complement sauce to chicken or fish.
1 Savoy cabbage or cabbage
2 dl lentils
Extra virgin olive oil for light frying
Dressing of extra virgin olive oil, lemon juice from ½ lemon, unrefined salt, freshly ground pepper and herbs.
Rinse the lentils and cook according to directions on the package. Pour boiling water on and cool them off.
Cut the cabbage into fine strips – rinse and dry and fry it lightly in virgin olive oil, just 2 min. Cool off.
Whisk the dressing together and peel the avocado and cut into fine boats. Press juice from the other half of the lemon over the avocado, so you avoid that it becomes dark.
Turn it all together with the dressing and serve. You can choose to eat the salad as a fully nutritious meal, you can supplement it with some organic bacon or you can serve it with chicken or fish.
